Food You'll Find On Every Dining Table During Christmas  In Denmark

December is the time when you can start smelling the buttery fragrance of ginger-bread cookies. This is the festive season when all Danish family kitchen are busy with baking and roasting to prepare delicious Christmas lunch and feast. While the size and amount of the food might be different from one family to another, we listed down the most common dishes that you’ll find served on every Scandinavian table. They are savoury, sweet and fatty. Special for this season’s greeting, 1 People made an experiment to create a personalised recipe that speak to the Danish design and Baliness nature. Enjoying reading on how the Danes fulfill their appetite during Christmas, before preparing the ingredients you’ll need to make a simple and tasty Rødgrød Med Fløde.

1. Roast Pork

Roast pork or roasted meat is must have for Christmas in Denmark. Some families, however, prefers to have roast duck or, although uncommon, roast goose. The roasted meat is usually served with potatoes or caramelized potatoes, red cabbage and plenty of brown gravy sauce.

2. Risalamande

Risalamande is a cold rice pudding dish that is served with cherry sauce and a piece of almond inside for family members to find. There is a tradition in Denmark where the lucky finder of this almond will be entitled to a small gift or believed to have good fortune, either a success in career or soon to be married.

3. Smørrebrød

Smørrebrød, is a traditional Scandinavian open-faced sandwich that usually consists of a piece of buttered rye bread, a dense, dark brown bread, topped with different combinations of seafood, meat, vegetables and condiments like cheese or spreads and garnishes. They are typically enjoyed with cold beer or snaps. 

Another must have dish during Christmas in Denmark is Rødgrød Med Fløde. It is essentially a porridge of an assortment of summer berries, such as raspberries or redcurrant. To accentuate the dessert, it is served with cream. Special for this post, 1 People shares a recipe for Rødgrød Med Fløde, specially curated by our in-house chef for you to try at home.

Recipe: 

Total:75 minutes

Yield:4 servings

Ingredients:

- 300gr Redberry

- 300gr Strawberry

- 500ml Water

- 1tbs Corn Starch

- 250gr Sugar

- Heavy or whipping cream

Follow these steps:

1. Chop the berries into smaller pieces.

2. Transfer all the ingredients except the potato starch and the cream into a saucepan. Mix the ingredients well and let the berries soak in the sugar water for about one hour.

3. Use medium heat to heat up the mixture until it boils. Let the mixture simmers for eight minutes.

4. Lower the heat and add the dissolved potato starch. Let the berries pudding simmer for another 3-5 minutes but avoid the mixture to boil.

5. Let them cool down, then put into fridge to get the thick and creamy texture.

6. Serve in a bowl or glass, then add the cream on top of it.
